Betting totals at college and betting totals at NFL are rather different things. At college the home teal usually determine the course of game. Of course such things happen in professional sports too, but it is more typically for college sphere. If the domestic team is run and gun, you can be sure that other team also will behave the same way.

There is one more example: after every first down clock is stopped. In professional games clock never stops, even if players are out of bounds. At college football if they are out of bounds, clock stops. So, if you have more time, you can get more scores.

Third example concerns overtime. In professional football when one team gets more points in overtime, that team is a winner. If both teams have equal quantity of points, than it is a draw. In college the situation is different. In college there are no draw games, they are given as many overtimes as it is necessary to win for one of the teams.

Problem with totals at college is that it is rather difficult to find totals. At NFL every game has a total and at college only a few games have totals.
